Uses
The classic pairing is makai ki roti with sarson ka saag and a spoon of desi ghee. You can also use maize flour for bread, pakoras, coating fish or thickening soups.
How to use
Knead with hot water a little at a time to a soft dough; because maize has no gluten, pat rotis by hand or roll them between plastic sheets, and cook on a medium tawa. Store in an airtight container in a cool, dry place.
