How to tell if honey is pure
Buy a sealed, branded jar from a trusted seller and read the label. Pure raw honey is thick and pours slowly, and most types slowly crystallise (turn thick or grainy) in cold weather — a normal sign of real, unheated honey. Be careful with very cheap loose “honey” sold without a brand.

Why has my honey become thick or grainy?
That is natural crystallisation. Raw honey that has not been heated crystallises over time, especially in winter. It is still good to eat — stand the jar in warm (not hot) water and stir until it is runny again.
